Black Bean Burgers

Step One

In a large skillet, heat olive oil over medium heat and add the onion, red pepper and garlic until the red pepper begins to soften. Remove from heat and stir in the spices.

Step Two

In a food processor, pulse the black beans and rolled oats. Add the rest of the dry ingredients, lemon juice and flax egg and pulse again.

Step Three

Shape into patties about ½ cup big and refrigerate for half an hour.

Step Four

Cook patties in a skillet for about 5 minutes on each side, until  browned and the patties are cooked all the way through.

Step Five

Serve with buns, vegan mayo, lettuce, and thinly sliced tomato.

Recipe Tips and Tricks:

- Make sure you shape the vegan black bean patties firmly to ensure that they do not fall apart when cooking. -Make sure you refrigerate the patties for at least 30 minutes before cooking - Soak flaxseeds in water for ten minutes. This will ensure the patties stay together.
